Banana Nut Muffins that are to die for!

I think I must be a "muffaholic" because I just love muffins! They're easy and fun to make and the varieties are endless! I really want to start looking into making the really healthy kind too, so I won't feel so guilty eating them lol. But this recipe is your pretty average muffin, so sorry for offering up a not-so-healthy choice this today! Just remember, the key is everything in moderation! It's ok to have one, just don't eat them all in one sitting lol. so, splurge a little, have the occasional treat...try this recipe and thank me later!

 
What you'll need:
3 large very ripe bananas
1 1/2 cups of flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup of white sugar
1/2 cup applesauce
1 large egg
1/3 cup of vegetable oil
1 tablespoon vanilla extract
1 cup of chopped walnuts
 
 
 
Preheat your oven to 375 degrees F. Take 3 large very ripe bananas and slice them up. Once sliced up, mash them into a puree like substance. Add all the wet ingredients...the egg, applesauce, vegetable oil, and vanilla extract. Next add the dry ingredients...the flour, cinnamon, baking powder, baking soda, salt, and sugar. Lastly, add in the cup of chopped walnuts and mix the batter very well. Be sure there are no clumps other than the banana and walnuts. Take your muffin tin and line each one. Then portion out each muffin section, filling about 2/3 of the way. Put in the oven for 25 minutes or until you have noticed they have risen nicely and have just a touch of brown on the tops. Take them out and let cool completely before you serve.
 
 
They will be moist and delicious! We love these as a nice quick breakfast! Works for dessert too, of course! Enjoy!
