National Chocolate Day!



I think I've said it before, I get a kick out of how there seriously is a "national day" for everything you can think of! National dog day, coffee day, popcorn day, hat day, hugging day, and get this...even a national straw day. Who comes up with this stuff? Well, I don't really know but all I know is that today, October 28th, is National Chocolate Day. Now there are very few of these "national days" that I actually give two hoots about, but I gotta say, National Chocolate Day is one of them! Probably ties in importance with National Coffee Day for me, lol.

Now I do love chocolate, but it's not something I have or even crave all the time. Actually I am very cliché when it comes to chocolate. There is a specific time I crave it every month, and without having a TMI situation, I'll leave it at that. Ok, moving on...so since it is National Chocolate Day, I figured I'd share a couple chocolate based recipes with y'all today!

I'll start off with a super easy one! Not to mention it's healthy too! Chocolate covered bananas! (National Banana Day is August 27th, by the way, lol) These are simple because they only require three ingredients and you already know the two main ones.

Here we go...
 

Chocolate Covered Bananas
(makes 12)



Ingredients:
  • 6 large bananas
  • 6 oz. chocolate chips
  • 1/2 coconut oil
  • popsicle sticks (12)
  • wax paper
Instructions:
  1. Peel bananas and cut each one in half through the middle.
  2. Insert a popsicle stick into the bottom (flat) portion of the banana.
  3. Put bananas on a tray lined with wax paper and freeze until totally frozen, approx. 4 hours.
  4. Before removing the bananas from the freezer, start making the chocolate coating.
  5. In a microwave-safe dish, combine the chocolate chips and coconut oil.
  6. Heat for 30 seconds, then stir. Heat for 30 seconds, then stir. Repeat once more if needed. (You don't want to over heat the chocolate, it can burn)
  7. Pour the liquid chocolate into a tall glass and dip each banana until well coated.
  8. After dipping each one, place on its side on the wax paper, then store in the freezer. If you want one right away, let it stay in freezer about 10 minutes, then enjoy! The rest can stay in the freezer until you wish to eat them! They will last quite a while in there, not that I expect them to last very long!
Soft Chocolate Chip Cookies
 
 

Ingredients:
  • 8 tablespoons salted butter
  • 1/4 cup brown sugar
  • 1/2 cup white sugar (organic raw cane sugar is a good option)
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
Instructions:
  1. Preheat oven to 350 degrees F.
  2. Microwave the butter just until it becomes soft, approx. 30 seconds.
  3. Using a mixer and hand-held beater, beat the sugar and the butter until smooth. Add the vanilla and egg, then beat on low speed until well blended. Don't beat too long, 20 seconds at most or the cookies won't come out soft.
  4. Add the flour, salt, baking soda and mix well.
  5. At this point, the consistency should allow you to mold the dough into balls, using your hands. If they seem to stick to your hands too much, add a touch of flour to your hands between making each ball.
  6. Roll out 9-12 balls and place on a non-stick cookie sheet.
  7. Bake in oven for approx. 10 minutes. Keep an eye on them and watch for them to become puffy and just slightly tanned on top. Don't wait until they are browned like you might with other cookies.
  8. Remove from the oven and let cool 20 minutes...unless you can't wait, then just dig right in!

Chocolate Martini


Ingredients:
  • 1 1/2 ounces Godiva Chocolate Liqueur
  • 1 1/2 ounces Cream de Cacao
  • 1/2 ounce Vodka
  • 2 1/2 ounces half-and-half creamer
  • chocolate shavings
  • cocoa powder
  • ice cubes
Instructions:
  1. Put martini glass(es) in freezer for ten minutes.
  2. Put a few ice cubes into a shaker and add all liquid ingredients, shake vigorously for 1 minute.
  3. From any solid chocolate bar, shave off some, as much as is to your liking.
  4. Take your martini glass(es) out of the freezer. Pour some cocoa powder on a plate. With your finger, wet the outside rim of the martini glass and dip it into the cocoa powder.
  5. Pour the drink from the shaker into the martini glass, throw some chocolate shavings on top and enjoy!
*note: if you want an extra chocolaty touch, before pouring the drink, you can use chocolate
syrup to make some lines along the side of the glass.
