Blueberry Muffins Anyone?



Ok, so it was our first really cool day here, actually feeling like fall. I guess this put me in the mood to do some baking! I decided to make some blueberry muffins for tomorrow's breakfast. They turned out super delicious, yes of course we had to sample them tonight... but I thought I would share my recipe with you!




Here is what you will need;
2 cups of blueberries (I used frozen, thawed, but fresh would be even better!)
2 cups all-purpose flour
1 cup of sugar
2/3 cup of oil
1/2 cup of milk
2 eggs
2 teaspoons of baking powder
1/2 teaspoon of salt
1 tablespoon of vanilla extract

Now, let's get to work!
Preheat oven to 400 degrees. In a large mixing bowl, combine all the dry ingredients; flour, sugar, baking powder, and salt. Then add the eggs, oil, milk, and vanilla extract. Once mixed well and free of any lumps, add in the blueberries and stir in. Line your muffin tin. My little tip is to use an ice cream scooper to spoon out the mix. Then, put in the oven for 18 minutes. Take out and let cool.

18 minutes in the oven at 400 degrees!

You can leave them plain, or add cream cheese frosting like I did. Today I totally cheated, I used a store bought cream cheese frosting. It is fairly easy to make your own but sometimes I'm lazy and just buy it lol. I recently found this neat gadget in the baking aisle as well. Actually I noticed it while I was getting the cream cheese frosting haha. It is so easy to use and gives really nice frosting results! Simply load the container with the frosting, seal it up and pick what design tip you want to use. This was the first time I used this frosting device but I can't wait to play around with it! I went with one of the basic tips, it sort of has a "star" look to it, a pretty common look for cupcakes/muffins.

I asked my son if he wanted to help mommy bake, which he usually loves to, but today he said he just wanted to do the sprinkles! Well, I did not even plan to use sprinkles for these muffins, but since my boy wanted them, I wasn't going to argue!

  2. Lordie those look GOOD! It is feeling like fall here too making me desire soups, stews, chili etc. I am not the baker in the family - my daughter is. I do not measure well lol. I sure want a blueberry muffin now though!
